Open Faced Avocado Toast

Get a double boost of brain healthy fats from both avocado and olive oil in this easy lunch time recipe.

Ingredients

  • Slice of whole-grain bread
  • 1 avocado
  • 1 tsp olive oil
  • Salt & pepper to taste

  1. Lightly toast a slice of whole-grain bread. 
  2. Top with 3 to 4 tablespoons of mashed avocado or guacamole.
  3. Drizzle with 1 tsp olive oil and sprinkle with salt and pepper to taste.
  4. For an added protein punch,  add thin slices of smoked salmon or hard-cooked eggs.
