One Pan Salmon Bake with Roasted Veggies

Salmon is a brain-nourishing omega-3 superfood.   It contains high levels of DHA and EPA as well as Omega-3's that provide oxygen to the brain and allows you to retain new information while still remembering old information. 

Ingredients


  • 2 tbsp olive oil
  • 8 asparagus spears, trimmed and halved
  • 2 handfuls cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 2 salmon fillets, about 140g/5oz each
  • handful basil leaves



Directions


1. Preheat oven to 400 degrees.                     

2. Toss asparagus in 1 tbsp of olive oil and put into an ovenproof dish, roasting for 15 mins.

3. Add cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. 

4. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. 

5. Scatter over the basil leaves and serve everything scooped straight from the dish.
