Chicken and Veggie Lime Soup
This easy recipe is full of veggies and spices that will give your brain a boost. Perfect for a cold winter night! Serves 6.
Ingredients
5 chicken breasts
1 red onion, diced
2 carrots, diced
2 celery stocks, diced
1 jalapeno pepper, seeded and diced
1 tbsp olive oil
1 red pepper, diced
3 garlic cloves, crushed
14 oz jar of diced tomatoes
8 cups chicken stock
1/4 tsp each salt and pepper
1 tsp ground cumin
1 tsp oregano
1 lime, juiced
1 handful fresh cilantro chopped
2 avocados sliced
Directions
- In a pan, heat oil and add onion. Cook 3 minutes. Add the rest of the vegetables (carrots, celery, red pepper, garlic) to cook an additional 3 minutes.
- Place veggies in the crockpot, top with chicken, spices, salt and pepper.
- Pour 8 cups of stock and jar of tomatoes on top. Cover with lid and cook 6-8 hours on low.
- After cooking is complete, remove chicken, shred it with two forks, then return to crockpot.
- Add in the lime and fresh cilantro and stir well. Serve with more cilantro and fresh avocados on top.
